- 1 cup whole-wheat pastry flour
- 1/2 cup all-purpose flour
- 2 1/2 tbsp quick cooking oats
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp vanilla extract
- 2 tbsp creamy peanut butter
- 1/4 cup and 1/2 tbsp coconut (or regular) sugar
- 2 tbsp jam of your choice
Preheat oven to 350 degrees. In large mixing bowl combine all the dry ingredients (flour-baking soda).
Add in the remaining wet ingredients (vanilla extract-milk).
Add about half of the mixture to a greased standard size loaf pan. Make sure to spread evenly. *It’s easier to use the back of a spoon here*
Spread the jam evenly over the mixture. Top with remaining mixture. Spread evenly over the jam as best as you can. *It’s easier to use the back of a fork here*
Sprinkle a few oats on top if you’d like. Bake for close to 18 minutes. Let cool a few minutes before slicing..
