Heat the oil in a large skillet over medium-high heat.
Add your ground turkey or beef, breaking it apart into small pieces with a wooden spoon.
Sauté the meat for five to six minutes until completely browned and no pink remains, draining any excess grease if necessary.
Turn the skillet heat down to medium.
Sprinkle the packet of low-sodium taco seasoning directly over the browned meat.
Add in the rinsed black beans, corn kernels, and your favorite jar of chunky tomato salsa.
Stir everything together for two to three minutes until the mixture is uniform, bubbling, and heated completely through.
Turn the skillet heat down to low.
Scatter your cup of shredded pepper jack cheese evenly over the top of the entire mixture.
Add a tight lid over the pan for two minutes to let the steam trap and melt the cheese into a cheesy layer.
Turn off the heat on your stove completely and remove the lid carefully to let any excess steam release before serving.
Serve hot right out of the skillet with crunchy tortilla chips for dipping or topped with a dollop of Greek yogurt. Or serve in a bowl or on a plate with your preferred toppings.
