I’m so thankful to God that I finally perfected this recipe. It took many of do-overs and remakes, but I believe it’s now finally ready to be shared with everyone. I say this with a big sigh of relief..

I felt that this recipe had potential, so instead of throwing in the towel, I really worked on getting it right. And the perfected version is finally here for you to enjoy.

Don’t Give Up Too Soon..

Honestly, at times I really felt like giving up on perfecting this oat flour chocolate chip cookies recipe. But as we all know – it’s best to push forward with something that we feel hopeful or optimistic about.

Most of the time, our efforts aren’t in vain, you know? You just have to keep working at it, before giving up and calling it quits. Yes, it may take a few tries (and tears of frustration, lol). But it’s bound to produce fruit in the end.

These Cookies Contain the Best Healthy Ingredients

Along with being amazingly yummy, it helps that these cookies are on the healthy side. They contain almond butter, oat flour, unsweetened applesauce and coconut sugar. Some of the best nutritious ingredients that work together to produce these super delish treats.

What’s Great About Almond Butter

Almond butter is truly good for you. For starters, it’s plenty tasty; and it contains monounsaturated fats that helps to keep your heart in good shape. These fats also have the ability to help lower your blood cholesterol (source), which is a win-win for sure!

Oat Flour

I think almost everyone knows that oats are good for you. They’re whole grain and contain fiber, which is great for the health of your health also. Oats also helps lower the level of sugar in your blood as well. Pretty beneficial, I’d say.

It’s easier if you buy your oat flour from the store. I usually get mine from Whole Foods Market. But, you can make your own oat flour if you wish. It’s pretty easy. You just add the desired amount of oats to a high power blender and blend into a powder form. Super simple and convenient..

Unsweetened Applesauce

I added a bit of unsweetened applesauce in these cookies on the advice of Britt Berlin over at The Banana Diaries. She has this chocolate chip cookie recipe that has the most scrumptious chewy and soft texture. She attributes most of that texture to adding unsweetened applesauce.

I aspired to achieve a similar texture for this oat flour chocolate chip cookies recipe. And I’m so glad I followed her advice, because it really works! By adding the unsweetened applesauce, the cookies finally had that melt in your mouth texture that I was looking for.

Why I Chose to Use Coconut Sugar

Have you ever used coconut sugar before? You’re missing out if you haven’t. I myself first heard of it not too long ago. And I’ve been using it for a majority of my baking recipes ever since.

Most cookie recipes like this one call for light brown sugar. But the thing is – this sugar is high glycemic. So if you’re looking for a lower glycemic alternative, that’s where coconut sugar comes in.

There’s absolutely nothing wrong in using brown sugar in your cookie recipes. I use it too on occasion, because it gives cookies a soft moist texture. On the other hand, coconut sugar has a similar taste profile to light brown sugar, though it doesn’t add as much moisture to cookies. That’s where the addition of ingredients such as applesauce, nut butter, etc. comes in. They add in moisture to supplement the coconut sugar’s lower level of moisture property.

*For the Perfect Texture*

I know some people prefer their cookies to be soft and gooey, while others prefer them to have a bit of crunch. To achieve the perfect texture for these cookies, I wouldn’t bake them longer than 11-12 minutes. Start with the eleven minutes first. If you prefer a less gooey (firmer) texture, then bake for a minute longer.

Here are the ingredients you’ll be using to make these cookies. Look them over to make sure you have everything you need before you start.

  • Oat Flour
  • All Purpose Flour
  • Salt: Just a bit to bring balance to the flavor of these cookies.
  • Baking Powder and Baking Soda
  • Chocolate Chips
  • Vanilla Extract
  • An Egg (preferably at room temp)
  • Creamy Almond Butter
  • Unsweetened Applesauce: Adds additional moisture. And helps to reduce having to add more oil/butter, etc.)
  • Light Brown or Coconut Sugar: They both taste similar. Light brown sugar just adds a little more moisture. I preferred to use coconut sugar since it’s lower glycemic..

Mouthwatering Oat Flour Chocolate Chip Cookies

Ingredients
  

  • 3/4 tsp vanilla extract
  • 1 egg preferably at room temp, but not required
  • 3 tbsp creamy almond butter
  • 1 tbsp unsweetened applesauce
  • 1/2 cup + 1/2 tbsp coconut sugar or light brown sugar
  • 3/4 cup oat flour
  • 4 tbsp all purpose flour If the dough is still a little too soft, add up to a tbsp and a half more flour; but not too much more than that. The goal is to achieve that soft gooey(ish) cookie texture..
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 2-3 tbsp semi sweet chocolate chips You can add more on top of the cookies before baking if you’d like..

Instructions
 

  • Preheat your oven to 350 degrees. Line a baking sheet with parchment paper, spray lightly with oil. The bottoms of the cookies tend to stick if this is not done.
    Wipe any excess oil off with paper towel, and set the pan aside.
  • Add all of the wet ingredients to a large mixing bowl. This includes the vanilla extract, egg, almond butter, unsweetened applesauce and brown sugar.
    Stir until all of the ingredients are incorporated.
  • Add in the flour(s), salt, baking powder, baking soda and chocolate chips. Combine the mixture well, but not too much.
    Refrigerate the dough for 30-45 minutes. This is to ensure the cookies have the best texture and flavor.
  • Using a 1 1/2 capacity cookie scoop (or larger/smaller if you prefer), scoop the dough onto the baking sheet.
    Note: This cookie dough is on the softer side, because of the addition of the almond butter. Therefore you may need an extra spoon to help scoop the dough out.
    *Before baking, you can press more chocolate chips into the tops of the cookies if you prefer*
  • Bake the cookies for 11-12 minutes. Don’t overbake.
    Let the cookies cool a few minutes before removing them from the baking sheet. Best enjoyed warm..
